Cinco De Mayo commemorates the Mexican victory over the French in the town of Puebla de Los Angeles during the French-Mexican War (1861-1867). In celebration of Cinco de Mayo, I decided to make impromptu Cadillac Margarita Cupcakes with some of the extra vanilla cupcake batter I had left from an order. Cadillac Margaritas have a sweet and sour, lemon lime flavor that I thought would go really well with cupcakes.
Normally I would add tequila to the batter, like a rum cake, but because the batter was already prepared I just basted the tequila a few time directly on to the cupcakes after removing them from the oven. I added fresh lemon and lime zest to already prepared vanilla buttercream frosting and frosted the cupcakes once cooled. These cupcakes had a light margarita flavor but were still safe for work!
